A simple piezoelectric transducer (piezo) is a 2-wire device. If yours has 3 wires, it is probably a piezo combined with an internal oscillator. So the 3 wires are probably power (red), ground (black), and enable (white). With the internal oscillator, you'll never be able to vary the frequency for the guitar to work. So you'll either have to tear it apart to remove the simple piezo inside, or buy/find another piezo to use.
